Juicy and Delicious Blended Mushroom Burger

This simple recipe delivers amazingly juicy and flavorful burgers, while also cutting fat and calories and adding some extra vitamins. See, it's healthy!

A note before you continue with this recipe: I used a few things that you may not have handy, specifically a food scale and food processor. See notes during instructions on how to make this recipe without them.

This recipe makes five 1/4 oz burgers, or if you still want the full 1/4 oz of beef, four 5 ounce burgers

Ingredients

  • 1lb Ground Beef (I used 80/20)
  • 4oz Mushrooms (I used baby bella)
  • 2 Cloves Garlic
  • 1/2 tsp Onion Powder
  • 1/2 tsp Black Pepper
  • 1/4 tsp Crushed Red Pepper (or to taste)
  • Salt (optional, to taste)
    Note: If you are going to add salt, add it directly to the patty right before or during cooking. Incorporating salt into the beef will result in a tougher, chewier burger
  • The buns and other toppings of your choice

Equipment / Supplies

  • Food Processor (recommended, not required)
  • Kitchen Scale (recommended, not required)
  • The Cast Iron Skillet of your choosing. I used my Stargazer 10.5 inch but you may want to go with something larger if you want to cook them all at once
  • Mixing Bowl

Instructions

Preparing the Patties

  1. Using your kitchen scale, weigh out 4 ounces of mushrooms and rinse them. If you don't have a kitchen scale, use your best estimation based on the size of the container they came in
  2. Crush and remove skin from 2 Garlic Cloves
  3. Add mushrooms and garlic to your food processer and pulse until there are no large pieces left. You don't want to make a paste, but you do want evenly sized small pieces. If you don't have a food processor just finely chop or mince by hand
  4. Transfer your beef and the mushroom garlic mixture to a large mixing bowl
  5. Add the onion powder, black pepper, crushed red pepper, and any other ingredients you'd like
  6. Using a wooden spoon or your hands, incorporate the seasonings and mushroom mix into the beef as well as you can
  7. Form balls of equal size, I recommend either five 4oz balls or four 5oz balls. Your kitchen scale can home in handy here if you like to be precise
  8. Flatten the patties on your cutting board to your preferred size and thickness

Cooking

  1. Heat your Cast Iron Skillet on medium and add the oil of your choice to prevent sticking
  2. Add the patty or patties to the pan, but don't crowd them. The mushrooms will release a lot of moisture while cooking, too much will result in a poor sear and steamed meat
  3. Cook, flipping frequently, to your desired temperature and doneness. Keep in mind that these cook slower than a standard all beef burger, so it may take some trial and error to get the times down perfectly. For me, with relatively thin patties, it was about 4-5 minutes per side for medium rare. If you chopped your mushrooms by hand it may take even longer, as those larger pieces will take longer to evaporate their excess moisture
