Light & Fluffy Sourdough Starter Pancakes


Prep Time: 10 Minutes + 12 Hours Resting | Cook Time: 5 Minutes Per Pancake | Total Time: 13 Hours

These sourdough starter pancakes are absurdly fluffy and delicious, with a light crisp from cooking in a hot cast iron skillet.

This recipe makes about 6-8 Pancakes

Ingredients

  • 240g Active Sourdough Starter (You really should use a kitchen scale for this, but it's somewhere around 1 cup)
  • 1 Cup Buttermilk (light buttermilk works too)
  • 120g All Purpose Flour (about 1 cup, but again, use a scale!)
  • 1 Tablespoon Honey (white or light brown sugar will work as well)
  • 1 Room Temperature Egg
  • 1/4 Cup Sunflower Oil or other neutral oil (melted unsalted butter will work as well, just let it cool a bit before adding to the batter)
  • 1/2 Teaspoon Kosher Salt
  • 1/2 Teaspoon Vanilla Extract
  • 1 Teaspoon Baking Soda

  • Cast Iron Skillet
  • Medium size Bowl
  • Plastic Wrap

Instructions

The Night Before

  1. Combine your bubbly, active starter with the buttermilk, flour, and sugar. Mix until well combined and there are no chunks of dry flour
  2. Cover the bowl tightly with plastic wrap and rest somewhere cool. If it's hot in your kitchen, try putting it in the basement, or in a pinch, the fridge. If refrigerated overnight, take it out an hour or two before cooking

The Morning Of

  1. Remove the egg from the fridge an hour or so before cooking and allow to come to room temperature
  2. Whisk together the egg, oil, and vanilla extract. Continue whisking until well incorporated and bubbly
  3. Pour the egg mixture on top of the starter base
  4. Add the salt and baking soda and gently mix together until well incorporated
  5. Allow to rest for 10-20 minutes
  6. While the batter is resting, pick your favorite skillet and coat with butter of cooking oil of your choice
  7. Heat on medium-high until the pan is around 350-400 degrees
  8. Pour batter onto the hot pan and reduce heat to medium-low. You want to keep the temperature of the skillet around 350 degrees while it cooks
  9. Once bubbles are forming on the surface, carefully lift the edge of the pancake to check that the bottom is thoroughly cooked and browned. About 2 minutes
  10. Flip and cook for another 1-2 minutes, or until browned to your liking
  11. Top with butter, fresh fruit, maple syrup, whipped cream, whatever your heart desires, and enjoy!
